The Dignified Plate

Texture Modification Playbook & Training Program. The IDDSI standard, the National Dysphagia Diet cross-walk, and production, dignity, and quality standards for every brand.

A resident sits down to dinner in a dining room she has eaten in for six years. Around her, plates arrive: roast chicken, glazed carrots, whipped potatoes. In front of her, a bowl of beige. She did not order it. Her swallow did. The Dignified Plate exists so that the kitchen changes that story: the same numerical floors in every brand, two production tiers, two-person release, and a plate that looks like dinner.

Level colors and names follow the IDDSI Framework (International Dysphagia Diet Standardisation Initiative, CC BY-SA 4.0, iddsi.org). Mixed legacy and IDDSI labeling during a transition is a documented texture-error vector; the playbook carries the legacy-order translation protocol.

The playbook governs. Everything else teaches it or proves it.

Playbook v3 supersedes the v2 playbook and, through it, the standalone SOP and Field Operations Workbook from May 2026. Where wording differs, the playbook wins.
