These commitments are operational, not aspirational — grounded in the Culinary Framework and expressed through Our Culinary Commitment, they guide every purchasing decision, every supplier conversation, and every menu that leaves our kitchens.
The Supply Chain Commitments are organized by procurement category — Meats, Poultry, Seafood, Eggs, Groceries, Produce, Dairy, and Bakery. Each category carries non-negotiable baseline requirements, preferred sourcing attributes, quality specifications, and accountability expectations for distribution and supplier partners.
We hold our supply chain partners to the same standard we hold our culinary teams: excellence, integrity, and relentless improvement. Approved suppliers meet defined criteria; product compliance is audited; and the framework integrates with our category-coded procurement system so that sourcing decisions are traceable end to end.
