Responsible sourcing is not a checkbox — it is a relationship. Our procurement decisions are guided by sustainability, transparency, ethics, and health, validated through third-party certifications and direct relationships with regional producers who operate with integrity.

Local and seasonal sourcing for fresher, more nutrient-dense ingredients at the point of service.

USDA Organic produce and Marine Stewardship Council seafood wherever operationally feasible.

The cleaner the plate, the clearer the promise. Older adults are among the populations most affected by artificial preservatives and synthetic compounds — so our menus are built from real, recognizable ingredients, with sauces, stocks, and dressings made in-house.

Scratch cooking is the most direct expression of culinary respect. It means roasting bones to build stock, slicing fresh vegetables each morning, crafting vinaigrettes by hand, and baking bread and desserts in-house. Our culinary teams are trained, equipped, and expected to truly cook — every day.

All stocks, broths, and soup bases built from scratch — no sodium-laden commercial concentrates.

Fresh-cut produce daily; all sauces, dressings, and condiments made in-house.

Bread, muffins, and pastries baked on-site — including low-sodium, gluten-sensitive, and diabetic-appropriate formulations.

TrueVue Platform standardizes scratch recipes across all locations — consistent quality that scales without compromising craft.
