Daily Service Readiness

The Lineup

364 days. One standard. Every service.

The Lineup is the Phoenix3 pre-shift huddle — the daily heartbeat of who we are. A structured 15–25 minute team gathering before every service that grounds the team in safety, culinary craft, hospitality, and the day ahead. It opens with the Spark and closes with a send-off, and it is built to run with intention, every single day.

Why The Lineup

The daily heartbeat of who we are

The Ritz-Carlton has held its daily lineup since 1983, missing only one day. Michelin kitchens brief before every service. Every great dining program is built one service at a time.

The Lineup brings that discipline to every Phoenix3 kitchen and dining room. It is not a formality and it is not optional — it is consistent, intentional, daily reinforcement of who we are as culinary professionals, hospitality practitioners, and members of a mission-driven organization. A 15-minute huddle done with intention transforms the service that follows.

Two resources power it: the Pre-Shift Huddle Template, which structures the seven-step lineup a manager runs before each shift, and the Annual Huddle Calendar, which supplies one prepared service topic for all 364 days of the service year. Both are available to download below.

The Huddle Structure

Seven steps, start to send-off

Each lineup follows the same arc. The manager prepares the content before the team assembles, then runs it with energy.

1
The Spark
Culture Department content — core value recital, Illuminator moment, and #ShineOn peer recognition. Led by the Culture Ambassador.
~15 min
2
Safety Moment
One specific safety or sanitation topic, rotated daily through the CrossCheck audit categories and tied to something visible right now.
2 min
3
The Day Ahead
Covers, VIPs, dietary alerts and diet changes, 86’d items, staffing, and events affecting service flow. The operational core.
3 min
4
Culinary Focus
The chef’s moment — today’s feature, the ingredient story, the texture-modified alternative, and the culinary commitment tie-in. Taste it as a team.
2 min
5
Service Topic of the Day
One topic pulled from the Annual Huddle Calendar — taught, demonstrated, or asked as a question. The Ritz-Carlton principle in action.
2 min
6
Pride of Ownership
One rotating team member shares a constructive improvement or a win to repeat. Forward-looking ownership — never a complaint session.
1 min
7
The Send-Off
Close with energy — a declaration, challenge, or collective statement that sends the team into service with intention.

Step One

The Spark

The huddle opens with the Spark — the culture moment that grounds the team before the operational content begins.

Owned by the Culture Department · Led by the Culture Ambassador

Culture comes first. Every shift.

The Spark is provided weekly by the Phoenix3 Culture Department and is never modified or skipped. The Culture Ambassador on duty owns this space fully — setting the emotional and values-based tone before the team moves into safety, the day, and the service topic. #ShineOn is peer-to-peer: the manager should never be the only voice of recognition.

Moment of Consciousness
One minute of breathing to arrive and reset.
Core Value Recital
The entire team states the core value statement together.
Illuminator Moment
A reflection led by the Culture Ambassador.
#ShineOn Recognition
A team member names a peer out loud — and says specifically why.
The Annual Huddle Calendar

364 topics. Seven pillars. One per day.

The calendar supplies Step 5 of every huddle. Each pillar is assigned to the same day of the week, every week — so every operational area is reinforced with consistency.
